The Balqees story

Named after the Queen of Sheba, served at her table

Balqees, Queen of Sheba, is the symbol of Yemeni generosity. Her name is our promise: the Yemeni table exactly as it is served in the homes of Sanaa and Aden, generous and uncompromising.

In our kitchen things take their time: haneeth over embers, madghout in the pressure pot, malawah in the tandoor, and Adeni ghee in everything.

Three methods, one flavour

The pressure pot

Madghout: meat, rice, tomato and spice cooked together until every grain holds the flavour.

Over the embers

Haneeth and bariyah: slow-roasted over coals until tender and smoky.

The tandoor

Malawah bread and mandi: straight from the heat of the tandoor to the table.
